Position Summary

The Jr. Sous Chef provides support to the Sous Chefs by ensuring proper food production and execution for all banquet events and other functions at The Hollywood Roosevelt. This is a full-time supervisory role that requires flexibility in scheduling.

Essential Duties and Responsibilities

  • Supervise Banquet Culinary staff and assist with food production tasks, as needed, to ensure consistent quality and standards.
  • Contribute to the Banquets Culinary team in developing, designing, and creating new menus and menu items, and applications to enhance food production and service.
  • Make recommendations on food presentation and displays.
  • Assist the Sous Chef, Banquets with providing input on monthly inventories, pricing, cost controls, requisitioning, and issuing for food production, as needed.
  • Consult daily with Sous Chef and Chefs on daily requirements, functions, and pop-up events.
  • Assume complete charge of the Banquet kitchen in the absence of Sous Chef.
  • Guide and train Banquet Culinary staff to ensure high motivation.
  • Support Sous Chef with supervision, training of employees, and maintaining sanitation and safety.
  • Set an example for others for personal hygiene, cleanliness, and teamwork.
  • Ensure effective communication between employees and secure a team-oriented working environment.
  • Establish and maintain effective inter-departmental working relationships.
  • Maintain knowledge of all standard procedures and policies pertaining to food preparation, receiving, storage, and sanitation.
  • Follow good preservation standards for the proper handling of all food products at the appropriate temperature.
  • Observe and test foods being cooked by tasting and smelling to determine that it is cooked to standard.
  • Maintain cleaning of the preparation and cooking station at all-times following California Health and Safety codes.
  • Other duties as assigned.

Kitchen Knowledge

Strong knowledge of professional cooking and knife handling skills. Understanding and knowledge of safety, sanitation and food handling procedures. Must be efficient with use of kitchen equipment and tools

Education and Work Experience

  • 4+ years of cooking experience in specified area or other related operation required
  • Previous supervisory experience required
  • Experience in high volume establishment preferred
  • Previous hospitality industry experience preferred

Certificates, Licenses and Registrations:

  • California ServSafe Food Handler Card

Supervisory Responsibilities

Supervising of the kitchen team in an orderly, supportive manner.
