Job Summary:
The AM Sous Chef will assist the Chef de Cuisine in overseeing all kitchen operations, including food preparation, staff management, and kitchen maintenance. This role requires strong leadership skills, culinary expertise, and the ability to maintain high standards of food quality and safety. The AM Sous Chef will ensure that the kitchen operates efficiently, effectively, and consistently, delivering exceptional dining experiences to our guests.
Key Responsibilities:
Kitchen Management:
- Assist the Chef de Cuisine in menu planning, recipe development, and food presentation.
- Supervise kitchen staff, including line cooks, prep cooks, and dishwashers.
- Oversee daily kitchen operations, ensuring that all dishes are prepared according to recipes and standards.
Staff Supervision:
- Train, mentor, and evaluate kitchen staff to ensure high performance and adherence to standards.
- Schedule staff shifts and manage labor costs effectively.
- Handle disciplinary actions and resolve staff conflicts as needed.
Food Quality and Safety:
- Ensure that all food is prepared and presented to the highest quality standards.
- Maintain cleanliness and organization in the kitchen, adhering to health and safety regulations.
- Monitor food safety practices, including proper storage and handling of ingredients.
Inventory and Ordering:
- Manage inventory levels, including ordering and receiving supplies.
- Conduct regular inventory checks to minimize waste and control costs.
- Work with vendors to source high-quality ingredients and negotiate pricing.
Operational Efficiency:
- Assist in creating and implementing kitchen policies and procedures.
- Monitor kitchen equipment and ensure proper maintenance and repair.
- Collaborate with front-of-house staff to ensure smooth communication and service.
Menu Development:
- Contribute to menu creation and seasonal specials in collaboration with the Chef de Cuisine.
- Stay updated on culinary trends and incorporate innovative ideas into the menu.
Qualifications:
- Experience: Proven experience as a Sous Chef or in a similar role, preferably in a high-volume or fine dining establishment.
- Skills: Strong culinary skills, leadership abilities, and excellent organizational and communication skills.
