Job Summary

As a key member of our Marriott Hotels team, the Executive Steward will oversee the daily kitchen utility operations and staff. This role is responsible for ensuring the smooth operation of the dish room, night cleaning, back dock cleaning and maintenance, banquet plating and food running. The successful candidate will supervise kitchen employees not actively engaged in cooking and strive to continually improve guest and employee satisfaction while maintaining the operating budget.

Key Responsibilities
  • Manage day-to-day operations, including ordering and managing necessary supplies, scheduling events and programs, and monitoring the inflow of ordered materials and maintenance of current materials.
  • Conduct china, glass, and silver inventories, control inventories of food, equipment, smallware, and liquor, and report shortages to designated personnel.
  • Inspect supplies, equipment, and work areas to ensure efficient service and conformance to standards.
  • Investigate reports and follow up on employee accidents, manage all equipment, china, glass, and silver, and supervise employees' ability to follow loss prevention policies to prevent accidents and control costs.
  • Enforce proper cleaning routines for serviceware, equipment, floors, and ensure all food holding and transport equipment is in working order.
  • Ensure compliance with all applicable laws and regulations, food handling and sanitation standards, and inform and/or update executives, peers, and subordinates on relevant information in a timely manner.
Requirements
  • High school diploma or GED; 4 years of experience in the procurement, food and beverage, culinary, or related professional area.
  • Or 2-year degree in Hotel and Restaurant Management, Hospitality, Business Administration, or related major; 2 years of experience in the procurement, food and beverage, culinary, or related professional area.
