Key Responsibilities
  • Menu Planning: Collaborate with Chef Mourad and the Culinary Development Center (CDC) to develop unified and consistent menus for a la carte, large format, pastry, and tasting menus.
  • Training and Development: Provide continuous training and development opportunities for chefs and cooks to enhance their skills and knowledge.
  • Recipe Development: Develop new recipes and techniques for food preparation and presentation to ensure consistently high quality and minimize food costs.
  • Team Management: Maintain positive relationships with Front of House (FOH) staff and coordinate private parties and off-site events with the Catering Director.
  • Sourcing and Purchasing: Assist with sourcing, purchasing, and maintaining relationships with vendors and farmers.
  • Inventory Management: Assist with monthly inventory management.
  • Staff Management: Assist with hiring, scheduling, and payroll for all kitchen employees.
  • Sanitation and Safety: Ensure high standards of sanitation and cleanliness in line with Federal/State health code requirements and HACCP compliance.
  • Employee Safety: Safeguard all food preparation employees by implementing training to increase their knowledge about safety, sanitation, and accident prevention principles.
