Position Overview:

The Culinary Operations Manager collaborates closely with the Executive Chef to oversee and coordinate food preparation within the kitchen environment. Management-level personnel are expected to dedicate the necessary time each workday to fulfill their job duties; for OEM associates, overtime is applicable and calculated accordingly.

Qualifications:

  • Typically requires a Bachelor's degree along with 2 to 4 years of experience in a high-volume, full-service dining establishment.
  • Operates with minimal supervision, addressing complex issues independently while escalating only the most intricate matters to senior staff.
  • Demonstrates comprehensive knowledge of culinary practices and principles.
  • Provides leadership, coaching, and mentoring to kitchen staff.
  • Proficient in Windows Operating Systems, including company-approved spreadsheets and word processing applications.
  • Ability to adapt to a flexible work schedule.
  • Effective communication skills to convey information and ideas clearly.
  • Capable of quickly and accurately evaluating and selecting among various courses of action.
  • Thrives in high-pressure, fast-paced environments.
  • Skilled in identifying, preventing, and resolving workplace issues.
  • Effective listener, able to understand and clarify concerns raised by colleagues and guests.
  • Competent in managing financial information and basic arithmetic functions.
  • Maintains composure and objectivity under pressure.

Key Responsibilities:

  • Develops innovative and diverse menus that align with the restaurant's vision.
  • Trains kitchen personnel to comply with restaurant policies and sanitation standards.
  • Organizes schedules and directs kitchen staff to ensure efficient operations.
  • Designs visually appealing plating presentations.
  • Ensures compliance with hygiene and food safety regulations.
  • Manages kitchen inventory and adheres to budgetary constraints.
  • Approaches all interactions with guests and team members in a friendly, service-oriented manner.
  • Maintains high standards of personal appearance and grooming, including proper uniform and name tag usage.
  • Adheres to attendance standards as required by scheduling needs.
  • Complies with company standards and regulations to promote safe and efficient operations.
  • Meets certification requirements relevant to the position, including Food Handlers, Alcohol Awareness, CPR, and First Aid.
  • Maintains a warm and welcoming demeanor at all times.
  • Ensures all kitchen staff fulfill their job responsibilities effectively.
  • Creates menus and oversees food presentation.
  • Addresses and resolves customer concerns efficiently.
  • Conducts quality checks for menu accuracy and taste.
  • Minimizes spoilage, waste, and overproduction.
  • Regularly reviews house counts, forecasts, and VIP lists.
  • Monitors all banquet and catering activities.
  • Maintains comprehensive kitchen inventories.
  • Prepares annual performance reviews for staff.
  • Assists in achieving departmental objectives and goals.
  • Expedites service during peak meal periods through a hands-on approach.
  • Operates within a monthly food cost budget, adjusting requisitions and controlling waste.
  • Familiarizes with all company policies and hospitality terminology.
  • Ensures plating standards and usage records are maintained according to company guidelines.
  • Reviews food sales for accuracy on a daily basis.
  • Performs additional duties as assigned by the General Manager.
