Job Summary:

Whirly Brookfield, LLC is seeking an experienced and skilled Assistant Kitchen Manager to oversee the daily operations of our kitchen. As a key member of our culinary team, you will be responsible for ensuring the highest level of quality product and service.

Key Responsibilities:

  • Manage the kitchen on a daily basis, including food preparation, presentation, and execution.
  • Ensure that product presentation, execution, timing, and quality of food are upheld.
  • Schedule and train staff, maintain the cleanliness and organization of the kitchen area, and ensure the safety and sanitation of all kitchen areas.
  • Effectively manage costs and labor on a shift-by-shift basis.
  • Maintain WHIRLYBALL standards and specifications related to food preparations and food handling on a daily basis.
  • Responsible for compliance with all environmental and health board requirements related to preparation and service of food and beverages.
  • Maintain safety and sanitation standards.
  • Ordering of all food and bar products.
  • Scheduling of all kitchen staff.
  • Daily systems implemented and followed (i.e., line check, rosters, prep lists, daily menu item report, BEO, etc.).
  • Sanitation monitor.
  • Weekly kitchen walk-thru, create daily awareness & cleaning schedule.
  • Responsible for the development of kitchen staff.
  • Manages staff relations.
  • Assures staff morale is maintained at the highest level.
  • Oversee the day-to-day culinary operations and activities of the facility.
  • Maintain operational control of purchasing, receiving, purveyor lists, and inventory of all kitchen items.
  • Monitor performance of staff and ensure all procedures are completed to the department standards.
  • Provide employees and staff with proper training and monitoring to maintain cleanliness, sanitation, and organization along with the safety of all work areas.
  • Ensure the highest level of quality product and service.
  • Execution of all menu categories and specific recipes for each item, including timing, quality, temperature, portion control, presentation, etc.

Requirements:

  • Minimum 3 years' experience in high-volume full-service or casual dining/quality dining restaurant.
  • Ability to function in a team-oriented environment.
  • Organizational skills.
  • Candidates must have experience working in a high-volume concept.
  • Must be able to work nights, weekends, and holidays.
  • Banquet experience necessary.
  • Experience working for a national chain restaurant is a plus.
