Position Summary

The Culinary Operations Manager is responsible for overseeing all aspects of food and beverage preparation and service, while delegating critical tasks to supervisory personnel. This role involves managing food inventory and ensuring the smooth operation of kitchen activities, equipment, and supplies. Adherence to USDA nutritional guidelines and ORR policies is essential. The manager will also oversee food preparation, portion control, and the presentation of meals, ensuring that culturally appropriate menus are maintained.

Key Responsibilities:

  • Lead the food service team, ensuring compliance with federal regulations regarding food safety and handling.
  • Prepare and supervise meal preparation to ensure children receive well-balanced, consistent, and properly cooked meals.
  • Conduct inspections of kitchen areas, supplies, equipment, and dining spaces to ensure cleanliness and safety.
  • Assist in developing and managing a weekly meal plan for the residential facility.
  • Make necessary adjustments to menu items to accommodate dietary restrictions and allergies.
  • Estimate food consumption and organize preparation accordingly.
  • Maintain records of food purchases and manage inventory.
  • Order new menu items for specials or budget-friendly options.
  • Train and supervise kitchen staff as needed.
  • Coordinate food orders and manage kitchen personnel.
  • Oversee food preparation and cooking processes.
  • Ensure proper food plating and temperature standards are met.
  • Establish portion sizes for meals.
  • Order food supplies and kitchen equipment as required.
  • Provide training on food preparation and plating techniques to kitchen staff.
  • Store food products in accordance with safety regulations.
  • Maintain high sanitation and safety standards in the kitchen.
  • Manage inventory and procure food, beverages, equipment, and supplies.
  • Engage with various vendors and suppliers for food service operations.
  • Identify areas for improvement and develop innovative solutions.
  • Deliver training on food service policies and procedures as necessary.
  • Perform other duties as assigned.

Qualifications:

  • Education: Associate's Degree in Culinary Arts.

  • Bilingual in English and Spanish is required.
  • Must possess a state food handling certification, license, or permit.
  • Note: Willingness to train at various locations is required.

Work Environment:

This position primarily takes place in an office-like setting. Evening and weekend work may be necessary. Regular computer usage is expected. Physical requirements include standing, walking, sitting, and occasionally lifting up to 50 pounds. The role may involve exposure to hot and cold temperatures, as well as hazardous conditions.
