About the Job

We are seeking a highly skilled and experienced Pastry Chef to join our team at Seminole Hard Rock Hotel & Casino Hollywood. As a Pastry Chef, you will be responsible for assisting with the preparation of food in our assigned kitchen outlet, ensuring a fresh, positive, and exciting environment where safety, flawless delivery, and execution of product excellence and service are paramount.

Key Responsibilities
  • Exhibit conduct in accordance with all Gaming Commission Regulations and Seminole Tribe of Florida departmental policies and procedures.
  • Control the function of your section and assist in contributing to the overall Food and Beverage Department profit.
  • Ensure all menus and food produced in your section meet the standards set down by the management team.
  • Recreate recipes, techniques, and menu items as directed by management.
  • Participate in on-the-job training sessions with all staff.
  • Responsible for daily preparation of all food requirements and daily specials for your section.
  • Communicate with the chefs to order proper quantities for the following shifts.
  • Ensure service is fast, fun, friendly, fresh, and focused.
  • Ensure that the above applies in accordance with established standards in respect of preparation, storage, sanitation, and general hygiene.
  • Conduct regular cleaning within kitchen outlets.
  • Demonstrate a commitment to ensuring responsible gaming and responsible alcohol service by discreetly notifying appropriate managers of concerns and observations.
  • Demonstrate actions and behaviors that reinforce the Company's Mission and Values of Communication, Integrity, Fun, Respect, Accountability, Passion, and Dedication.
  • Ensure prompt and discreet notification to managers and/or the Ethics Hotline of any observation of illegal acts or internal ethics violations.
  • Ensure activities comply with relevant statutory and regulatory requirements, legal demands, and professional and ethical standards.
  • Comply with all internal policies and procedures.
  • Knowledge of full Pastry menu.
  • Knowledge of Japanese, European, and American pastry techniques.
  • Perform other duties as assigned.
Requirements

Culinary degree and two (2) years' experience in producing pastry in a similar high-caliber establishment required. Received training in Pastry, Garde Manger, Bakery, Production, Japanese Cooking, A La Carte, Buffet, and Kitchen Artistry outlets required.

Work Environment
  • May be exposed to casino-related environmental factors, including, but not limited to, second-hand smoke and excessive noise.
  • While performing the duties of this job, the employee is frequently required to stand; walk; use hands to finger, handle, or feel; reach with hands and arms, talk or hear; and taste or smell. The employee must frequently lift and/or move up to 50 pounds. Specific vision abilities required by this job include close, distance, color, and peripheral vision, depth perception, and ability to adjust focus.

  • The Casino environment is hectic, fast-paced, and often crowded and noisy. May be exposed to casino-related environmental factors, including, but not limited to, second-hand smoke, excessive noise, and constant exposure to the general public.
