Assistant Culinary Manager

Position Overview
The Assistant Culinary Manager plays a pivotal role in supporting the Chef de Cuisine (CDC) in overseeing the creation of exceptional, authentic Italian cuisine within one of Eataly's vibrant, high-traffic, open kitchen establishments. This role demands a robust management presence, dedicated to upholding food quality standards while enthusiastically mentoring and motivating team members across all levels regarding Eataly's offerings.
Key Responsibilities
- Assist the Chef de Cuisine in managing kitchen personnel and operations.
- Oversee daily operational requirements to achieve Eataly's business, employee, menu, and guest service objectives.
- Participate in the recruitment, scheduling, payroll management, performance evaluations, and termination processes for kitchen staff.
- Supervise the preparation and organization of all kitchen stations.
- Engage in menu development and actively oversee food production processes.
- Train and collaborate with cooks and sous chefs on the hot line to ensure adherence to quality, efficiency, safety, and health protocols.
- Manage inventory requisitions and optimize food usage to maintain cost control.
- Ensure compliance with sanitation and nutritional standards among all kitchen staff.
- Communicate menu updates, specials, and inventory shortages to front-of-house staff.
- Document and address any incidents involving employees or guests, escalating issues as necessary.
- Perform additional tasks as assigned.
Compensation
The position offers a competitive salary range.
Qualifications
- Minimum of 4 years of kitchen experience, including at least 1 year in a supervisory role.
- Preferred educational background includes a Bachelor's Degree or a culinary arts diploma.
- Strong communication skills are essential.
- Proficient in advanced computer applications.
- Willingness to work flexible hours, including evenings, weekends, and holidays.
- Physical capability to lift up to 50 lbs and maintain mobility in a fast-paced kitchen environment.
- Experience with commercial kitchen equipment is required.
