Job Overview:
The Assistant Culinary Manager plays a pivotal role in supporting the Chef de Cuisine (CDC) in overseeing the creation of high-quality, authentic Italian cuisine within Eataly's vibrant, high-volume, open kitchen environment.

This position demands a robust management presence, ensuring not only the maintenance of food quality standards but also the enthusiastic training and motivation of staff at all levels regarding Eataly's offerings.

Reporting Structure:
Reports directly to the Chef de Cuisine and supervises kitchen personnel.

Key Responsibilities:

  • Assist Sous Chefs with daily operational requirements to fulfill Eataly's business, employee, menu, and guest service objectives.
  • Support in the hiring process, employee assignments, payroll management, scheduling, performance evaluations, and terminations.
  • Oversee kitchen mise en place (preparation for service) across all stations.
  • Engage in menu development and actively supervise food production.
  • Train and collaborate with cooks and sous chefs on the hot line to ensure consistent adherence to quality, speed, safety, and health standards.
  • Manage food requisitions and allocations, utilizing surplus food to control costs effectively.
  • Ensure that sanitation and nutrition protocols are strictly followed by all kitchen staff.
  • Communicate menu changes, specials, and shortages to front-of-house personnel.
  • Document, investigate, escalate, and resolve any incidents involving employees or guests.
  • Perform additional duties as assigned.

Qualifications:

  • Minimum of 4 years of back-of-house experience, including at least 1 year in a management role.
  • Bachelor's Degree or equivalent qualification from a recognized culinary arts program is preferred.
  • Exceptional communication skills.
  • Proficient in advanced computer applications.
  • Availability for on-site work with a flexible schedule, including evenings, weekends, and holidays.
  • Ability to lift up to 50 lbs and maintain mobility in a fast-paced kitchen environment.
  • Capacity to stand or walk for extended periods, up to 8 hours.
  • Experience working with commercial kitchen equipment, including mixers, ovens, and torches.
