Executive Sous Chef - Restaurants

At Grand Geneva Resort and Spa, we're seeking a talented and experienced Executive Sous Chef to join our culinary team. As a key member of our kitchen leadership, you'll be responsible for training, supervising, and working with our chefs' staff to create exceptional dining experiences for our guests.

Key Responsibilities:

  • Assign and oversee specific duties to kitchen staff to ensure efficient operation.
  • Select, train, and supervise kitchen staff in menu preparation and presentation.
  • Schedule staff to maintain proper coverage while controlling payroll costs.
  • Ensure proper food handling, storage, and rotation to meet Health Department regulations.
  • Adhere to cost control procedures and maintain high-quality standards.
  • Supervise daily sanitation and safety practices.
  • Maintain vacation schedules and assist with equipment maintenance.

Requirements:

  • High School Diploma or equivalent, with relevant experience in hotel or resort management.
  • At least 3-5 years of management experience in high-volume production environments.
  • Thorough knowledge of food products, recipes, and food preparation techniques.
  • Working knowledge of safety sanitation standards and equipment operation.
  • Ability to read, write, and understand English language for requisitions, recipes, and communication.
  • Sufficient manual dexterity for kitchen equipment operation.
  • Ability to lift, carry, or move goods weighing up to 200lbs.
  • Flexibility to work varied schedules, including days, nights, weekends, and holidays.
