Executive Sous Chef

We are seeking a highly skilled and experienced Sous Chef to join our culinary team at Madison Collective in Los Angeles. As a key member of our kitchen team, you will be responsible for assisting the Executive Chef and Executive Sous Chef in managing daily kitchen activities, including overseeing staff, aiding with menu preparation, ensuring food quality and freshness, and monitoring ordering and stocking.
Key Responsibilities:
- Assist in the supervision of back-of-house staff, including receiving, storing, prepping, and cooking.
- Contribute to the development, testing, and costing of new menu concepts.
- Maintain accurate and up-to-date recipes and costing for all dishes.
- Oversee the preparation, portion sizes, and timeliness of food preparation, minimizing waste.
- Maintain the cleanliness of the kitchen area.
- Promote teamwork and quality service through daily communication and coordination with the restaurant team.
- Assist in sourcing supplies and equipment to ensure best quality and pricing.
- Plan, assign, and coordinate work for the Line Cooks team.
- Supply recipes for and suggest methods and procedures for Line Cooks.
- Maintain accurate and detailed production records.
- Participate in preparing food items on the line for service.
- Assist in recruitment efforts, including reviewing applications, overseeing stages, checking references, and interviewing.
Requirements:
- A minimum of 3-4 years of experience in a kitchen manager position.
- ServSafe California Food Handlers Card preferred but not required prior to employment.
- Experience working in fine dining required.
Physical Requirements:
- Must be able to stand and exert well-paced mobility for up to 8 hours in length.
- Must be able to exert well-paced ability to maneuver between functions occurring simultaneously.
- May be required to lift up to 50 lbs.
- Must have the ability to bend, squat, and lift 50 lbs. on a regular basis.
- Must be able to bend, twist, stoop, squat, and stretch to fulfill tasks.
- Requires grasping, standing, walking, repetitive motions, bending, and climbing.
