Liberty & Plenty Distillery is a craft distillery situated in downtown Durham and Wilson, North Carolina, specializing in the production of Bourbon, Whiskey, Rum, Vodka, and Gin. Our production methodology incorporates Copper Pot Batch Distillation in Durham, NC, alongside larger-scale Column Distillation and Pot Distillation in Wilson, NC.

Candidate Profile

Liberty & Plenty Distillery is seeking an experienced, organized, detail-oriented, and innovative distiller with a degree in engineering. The ideal candidate will possess a positive attitude and a strong work ethic, demonstrating the ability to collaborate effectively and provide experienced leadership in manufacturing and production.

Key Responsibilities:

  • Oversee grain handling, milling, mashing, and distillation processes using a Double Batch System and Rotary Evaporators, as well as Column Distillation.
  • Manage the ordering, evaluation, receipt, and tracking of all raw materials required for production in collaboration with suppliers and utilizing Distill x 5 Software systems.
  • Ensure compliance with all MAQ and Flashpoint regulations pertaining to building and fire codes, including filing TTB and NCABC reports.
  • Operate and maintain essential equipment such as pumps, motors, agitators, valves, and filter presses to facilitate daily mashing operations and product transfers.
  • Supervise fire suppression systems, particularly in Riser Rooms and Sprinkler Systems.
  • Execute large-scale Column Distillation for whiskey production, managing all aspects from grain milling to barreling and bottling.
  • Engage in blending and bottling of spirits, while also interfacing with consumers and managing team dynamics.
  • Develop Standard Operating Procedures (SOPs) for all distillation activities.
  • Conduct weekly meetings and maintain strong communication with staff, vendors, and both internal and external stakeholders.
  • Oversee other full-time and part-time staff as well as contract labor.

Fermentation Management & Laboratory Analysis:

  • Document and monitor data for multiple fermentations throughout shifts.
  • Utilize aseptic techniques for yeast hydration and manage various yeast strains to optimize fermentation.
  • Conduct laboratory procedures using density meters and refractometers to track batch progression.
  • Perform sensory evaluations of new make and maturing whiskey components for blending.
  • Monitor barrel and operational losses.

Distillation and Spirit Analysis:

  • Operate high-pressure steam-fed stills and large-scale Column + doubler stills, understanding batch distillation reflux and flashpoints.
  • Troubleshoot process and equipment issues while adhering to safety and regulatory requirements.
  • Maintain accurate records using distillery software for compliance with TTB regulations.
  • Execute alcohol processing flows for blending, storage, and bottling.
  • Conduct analysis using Rudolph Density Meter/Refractometer.

Cleaning, Sanitation & Safety:

  • Implement Clean-in-Place (CIP) procedures with appropriate chemicals and hot water.
  • Utilize best practices for cleaning and sanitizing production equipment.
  • Manage the disposal of spent grain and mash.
  • Develop and execute SOPs to maintain high cleanliness standards in production and customer-facing areas.
  • Ensure compliance with safety policies in accordance with OSHA and fire protection standards.

Minimum Qualifications:

  • B.S. Degree in Chemical Engineering or Process Engineering.
  • 2-5 years of experience in a distillery as a distiller or head distiller, with knowledge of distillation processes.
  • Flexibility to work early or late hours, including nights and weekends as necessary.
  • Highly organized with project management skills and the ability to multitask while ensuring safety and production quality.
  • Self-motivated and innovative, capable of working independently and collaboratively.
  • Physical capability to lift and manage heavy materials safely.
  • Forklift certification and a valid USA Driver's License.
  • Strong work ethic and positive attitude, with a willingness to contribute to a startup environment.
  • Excellent communication skills, both written and verbal.
  • Proficient in Microsoft products and distillery tracking software.
  • Must be at least 21 years old and able to work in varying environmental conditions.
  • Experience with pressurized systems and adherence to safety codes.
  • Strong project management and organizational skills.
  • Experience in staff management.
  • Six Sigma or related certifications are a plus.

Location:

Operations will be based in both Durham and Wilson, North Carolina, with training commencing in Durham.
