As the Culinary Director, you will play a critical role in our leadership team, overseeing the production facility, ensuring food safety and employee safety protocols, and driving operational excellence.

Key Responsibilities:

  • Oversee the commissary production facility, including the kitchen and bakery, to ensure seamless food production and delivery.
  • Develop and implement food safety and employee safety protocols to maintain a safe working environment.
  • Manage production planning, par levels, and prep sheets to optimize efficiency and minimize waste.
  • Purchase and maintain inventory to ensure timely delivery of high-quality ingredients.
  • Create weekly employee schedules to ensure adequate staffing and minimize overtime.
  • Perform regular line checks to ensure temperature control, rotation, and dating of all foods, as well as proper preparation and freshness.
  • Supervise and coordinate the activities of cooks and other food preparation workers to ensure smooth kitchen operations.
  • Train kitchen staff in food preparation, safe handling, equipment operation, food safety, and sanitation according to company and regulatory standards.
  • Develop and implement performance goals and objectives for the kitchen team, providing coaching and feedback to improve performance.
  • Research and develop new recipes and processes to improve current offerings and create new menu items.
  • Ensure all equipment is in operational condition and regularly cleaned to maintain a safe and efficient kitchen environment.

Requirements:

  • Minimum of 2-3 years of Culinary Director experience in food production and/or kitchen environment.
  • High-volume batch production experience.
  • Excellent understanding of various cooking methods, ingredients, equipment, and procedures.
  • Prior experience as a supervisor overseeing and directing a staff.
