Job Summary

The Executive Chef Assistant is responsible for overseeing and assisting in the preparation of all food items for the Hotel La Jolla's dining outlets, including the restaurant, cafe, room service, and employee cafeteria. This role requires maintaining the highest standards of quality and presentation to produce an appealing and appetizing product.

Responsibilities:
  • Supervise and assist in the preparation of all food items, ensuring that they meet the hotel's quality and presentation standards.
  • Assist in the supervision of kitchen staff, providing guidance and support as needed to ensure efficient and effective food preparation.
  • Ensure that all food is prepared and presented in accordance with the hotel's recipes and standards.
  • Maintain a clean and organized kitchen environment, adhering to health and safety standards.
  • Assist in the training of kitchen staff, providing guidance and support to ensure that they meet the hotel's quality and presentation standards.
  • Collaborate with the Executive Chef to develop and implement new menu items and recipes.
  • Assist in the management of kitchen inventory, ensuring that all ingredients and supplies are properly stocked and stored.
  • Perform other duties as assigned by the Executive Chef or other hotel management.
Requirements:
  • Previous supervisory experience in a kitchen environment.
  • At least 5 years of progressive experience in a hotel or related field.
  • Food Handlers Certification (must comply with State requirements).
  • Ability to convey information and ideas clearly.
  • Ability to evaluate and select among alternative courses of action quickly and accurately.
  • Ability to work well in stressful, high-pressure situations.
  • Ability to show initiative in job performance, including anticipating what needs to be done before it becomes a necessity.
  • Ability to maintain composure and objectivity under pressure.
  • Ability to effectively handle problems in the workplace, including anticipating, preventing, identifying, and solving problems as necessary.
  • Ability to assimilate complex information, data, etc. from disparate sources and consider, adjust, or modify to meet the constraints of the particular need.
  • Ability to effectively listen to, understand, and clarify the issues raised by coworkers and guests.
  • Ability to work with and understand financial information and data and basic arithmetic functions.
