Viceroy Hotel Group is seeking a highly skilled and experienced Sous Chef to lead the culinary efforts for Hotel Zena's restaurant, Figleaf. As a key member of the hotel's management team, you will be responsible for overseeing the preparation, presentation, and quality of all food produced in the hotel's outlets, including room service and rooftop bars.
Key Responsibilities- Oversee and supervise all food production, ensuring high-quality standards and presentation.
- Staff and schedule food production teams to meet labor costs and service standards.
- Work closely with the Director of Food and Beverage and Executive Chef to direct and assist in purchasing food and dry goods.
- Ensure cleanliness and organization of all related areas, including coolers, floors, equipment, and storerooms.
- Teach and supervise food sanitation and handling practices to ensure compliance with laws and regulations.
- Perform other related duties as required.
- Minimum 3-5 years' experience as a Sous Chef in a similar size operation with experience in Food and Beverage Management.
- Experience in a lifestyle hotel/resort background preferred.
- Excellent knowledge of computer accounting programs, math skills, and budgetary analysis capabilities required.
- Ability to lead and manage in an organization where people are considered the most important asset.
- Bilingual (English and Spanish preferred).
