Key Responsibilities

  • Leadership and Supervision
    • Supervise and train kitchen staff to ensure a safe and efficient work environment.
    • Monitor and control labor and food costs to meet or exceed budget targets.
  • Culinary Operations
    • Assist in creating menus for outlets, banquets, and special occasions.
    • Assume Executive Chef responsibilities when needed.
    • Schedule staff based on budget and forecasts.
  • Quality and Safety
    • Ensure proper kitchen sanitation and equipment maintenance.
    • Comply with sanitation standards and kitchen equipment maintenance.
  • Performance Management
    • Ensure staff understands and meets expectations.
    • Provide leadership to improve food quality scores.

Requirements

  • Minimum 2 years experience in a sous chef or supervisory role in a mid-sized to large hotel.
  • Obtain Safe Serve Manager's certification within 30 days of employment.
  • Must have culinary skills and the ability to lead and motivate staff.
  • Create and execute various meal presentations and service types.
  • Experience beyond New Orleans cuisine is an advantage.
  • Ability to create menus, cost items, and procure supplies.
  • Flexible schedule including weekends and holidays.
