Key Responsibilities- Food Preparation: Prepare all food items following proper recipes and procedures specified by the Executive Chef.
- Timely Service: Ensure all food items are prepared in a timely fashion.
- Batch Cooking: Use batch-cooking methods when appropriate to ensure a fresh product.
- Food Presentation: Visually inspect all food that is ready to be served for proper plating.
- Menu Planning: Regularly meet with the Executive Chef to discuss menu preparation for the upcoming weeks. Suggest ways to improve food quality and efficient production of menus.
- Kitchen Sanitation: Maintain kitchen sanitation and safety standards.
- Cleaning and Sanitizing: Clean and sanitize all work areas and equipment before and after use.
- Food Handling and Storage: Practice correct food handling and food storage procedures.
- Documentation: Maintain documentation of all temperature charts and records.
- Cleaning Duties: Complete assigned cleaning duties to ensure compliance and sanitary standards are met.
- Team Leadership: In the absence of the Executive Chef, oversee and direct all dining service Team Members assigned during a shift. Also resolve food problems by clarifying residents' concerns, determining cause, selecting the best solution, expediting corrected meal or adjustment, and following up with the resident to ensure the resolution meets their expectations.
- Training: Train new staff using the Dining Services Training Manual.
- Food Production Records: Accurately complete all food production records in accordance with company policies and procedures as well as federal and state guidelines.
- Team Success: Contribute to team success through positive interactions with residents and staff daily.
- Inventory Management: Order and maintain stock.
- Experience: A minimum of 5 years' experience in quality food preparation.
- Scratch Cooking: Experience in scratch cooking in a high volume, fine dining setting.
- Computer Skills: Proficiency in computer skills including MS Outlook, Word, etc.
