Culinary Operations Manager - Exciting Opportunity at Marriott International

JOB SUMMARY

As a Culinary Operations Manager, you will be responsible for ensuring the excellence, consistency, and efficiency of the kitchen operations within the restaurant. This role involves showcasing your culinary expertise by actively participating in kitchen tasks, leading the culinary team, and overseeing all aspects of food service operations. You will manage menu development, procurement processes, staffing, and food preparation for the restaurant(s). Collaborating with your team, you will enhance both guest and employee satisfaction while adhering to budgetary constraints. Upholding sanitation and food quality standards is essential, as is training and developing your team to drive performance improvements.

CANDIDATE PROFILE

Education and Experience

A high school diploma or GED is required; with 4 years of experience in culinary, food and beverage, or related fields.

OR

A 2-year degree in Culinary Arts, Hotel and Restaurant Management, or related fields; with 2 years of experience in culinary, food and beverage, or similar areas.

CORE WORK ACTIVITIES

Ensuring Culinary Standards and Responsibilities are Met

Innovate and create new ideas, relationships, systems, or products for the restaurant.

Supervise kitchen shift operations, ensuring compliance with all food & beverage policies and standards.

Maintain food preparation and storage standards.

Ensure high-quality products, presentations, and flavors.

Plan and manage food quantities and presentation for the restaurant.

Communicate production needs effectively.

Assist in developing daily and seasonal menu items.

Ensure compliance with all regulations and laws.

Monitor food product handling and temperatures.

Estimate daily production needs.

Prepare and cook various types of foods.

Check raw and cooked food quality.

Design decorative food displays.

Leading Culinary Teams

Manage cooks and food preparation staff.

Demonstrate leadership and influence team members.

Lead shift teams while preparing food items.

Supervise kitchen employees and manage daily operations.

Build trust and cooperation among team members.

Act as a role model for the team.

Ensure employee productivity and cross-training.

Establish collaborative relationships within the team.

Maintaining Restaurant Goals

Set and support kitchen goals and performance targets.

Manage daily kitchen operations effectively.

Understand the financial impact of kitchen operations.

Investigate and report employee accidents.

Implement safety standards.

Ensuring Exceptional Customer Service

Provide exceptional service for customer satisfaction.

Manage daily operations to meet customer expectations.

Improve service by understanding guest needs.

Set a positive example for guest relations.

Focus on guest satisfaction and continuous improvement.

Empower employees for excellent service.

Handle guest problems and feedback.

Managing and Conducting Human Resource Activities

Identify developmental needs of team members.

Train restaurant staff on menu items and preparation.

Manage employee discipline procedures.

Participate in performance appraisals and training.

Assist in hiring suitable team members.

Additional Responsibilities

Communicate effectively with supervisors and team members.

Analyze information for problem-solving.

Attend relevant meetings.

The salary range for this position is $71,000.00 to $93,000.00 annually.
