Culinary Operations Manager - Exciting Opportunity at Marriott International

JOB SUMMARY

Accountable for maintaining the quality, consistency, and efficiency of the kitchen operations within the restaurant. Demonstrates culinary expertise by actively participating in kitchen tasks, guiding the team, and overseeing all food-related functions. Responsible for menu management, procurement, staffing, and food preparation for the restaurant(s). Works collaboratively with the team to enhance both guest and employee satisfaction while adhering to budgetary constraints. Must uphold sanitation and food quality standards. Trains and develops the team to foster performance improvement.

CANDIDATE PROFILE

Education and Experience

High school diploma or GED; 4 years of experience in culinary, food and beverage, or related fields.

OR

2-year degree in Culinary Arts, Hotel and Restaurant Management, or related fields; 2 years of experience in culinary, food and beverage, or related areas.

Ensuring Culinary Standards and Responsibilities are Met

Innovates and develops new ideas, relationships, systems, or products for the restaurant.

Supervises kitchen shift operations, ensuring adherence to all food & beverage policies and standards.

Maintains food preparation and storage standards.

Ensures high-quality products, presentations, and flavors.

Plans and manages food quantities and presentation for the restaurant.

Effectively communicates production needs.

Assists in developing daily and seasonal menu items.

Ensures compliance with all regulations and laws.

Monitors food product handling and temperatures.

Estimates daily production needs.

Prepares and cooks various types of foods.

Checks raw and cooked food quality.

Designs decorative food displays.

Leading Culinary Teams

Manages cooks and food preparation staff.

Demonstrates leadership and influences team members.

Leads shift teams while preparing food items.

Supervises kitchen employees and manages daily operations.

Builds trust and cooperation among team members.

Acts as a role model for the team.

Ensures employee productivity and cross-training.

Establishes collaborative relationships within the team.

Maintaining Restaurant Goals

Sets and supports kitchen goals and performance targets.

Manages daily kitchen operations effectively.

Understands the financial impact of kitchen operations.

Investigates and reports employee accidents.

Implements safety standards.

Ensuring Exceptional Customer Service

Provides exceptional service for customer satisfaction.

Manages daily operations to meet customer expectations.

Improves service by understanding guest needs.

Sets a positive example for guest relations.

Focuses on guest satisfaction and continuous improvement.

Empowers employees for excellent service.

Handles guest problems and feedback.

Managing and Conducting Human Resource Activities

Identifies developmental needs of team members.

Trains restaurant staff on menu items and preparation.

Manages employee discipline procedures.

Participates in performance appraisals and training.

Assists in hiring suitable team members.

Additional Responsibilities

Communicates effectively with supervisors and team members.

Analyzes information for problem-solving.

Attends relevant meetings.

The salary range for this position is $71,000.00 to $93,000.00 annually.
