Job Overview

Position Summary

The Lead Stewarding Specialist is responsible for ensuring a clean and sanitary environment for food and beverage preparation and storage. This role involves overseeing the dish stations, kitchen areas, and back-of-house operations while supporting the Stewarding Supervisors with various tasks and responsibilities as they arise.


Key Responsibilities

  • Delegate tasks to stewards during the assigned shift.
  • Ensure that the shift is equipped with all necessary supplies for efficient operation.
  • Conduct daily checks of handwashing stations and replenish supplies as needed.
  • Distribute cleaning towels and chemicals at the start of each shift.
  • As the shift leader, monitor the productivity and performance of stewards, reporting any issues to the Stewarding Supervisor.
  • Review daily checklists with the Stewarding Supervisor and assign tasks accordingly.
  • Perform spot checks in all areas during daily rounds at the beginning and end of the shift.
  • Communicate with the Chef on duty at the start and conclusion of each shift.
  • Check in with the Stewarding Supervisor at the beginning and end of each shift.
  • Monitor chemical inventory daily and submit requests for low stock items.
  • Inspect china, glassware, and silverware inventory, requesting orders for items that are below standard.
  • Regularly check glasses and china for cleanliness throughout the shift.
  • Every two hours, shut down dish machines, drain water, clean screens, and ensure the availability of proper cleaning chemicals.
  • Inspect storage areas for cleanliness multiple times during each shift.
  • Maintain a polite and professional demeanor at all times.
  • Report any sub-standard performance to the Stewarding Supervisor for documentation and follow-up.

Qualifications

  • Consistent attendance in accordance with the standards outlined in the employee handbook.
  • Due to the cyclical nature of the hospitality and entertainment industry, team members may be required to work varying schedules to meet the business needs of the organization.
