Job Summary

We are seeking a highly skilled and experienced Executive Sous Chef to join our team at Omni Hotels & Resorts. As a key member of our culinary team, you will be responsible for overseeing the kitchen and food production outlet, ensuring effective operation and exceptional guest experiences.

Key Responsibilities
  • Leadership and Supervision: Assist the Executive Chef in overseeing the kitchen, supervising line cooks and garde manger personnel, and ensuring that all food items are prepared to the highest standards.
  • Quality Control: Consistently check line plating and quality, spot check outlets to ensure that Standard Operating Procedures (SOPs) are being followed.
  • Inventory Management: Requisition and order all necessary items for the following day from the food storeroom, non-food storeroom, and stewarding department.
  • Sanitation and Safety: Ensure that proper sanitation procedures are followed and the outlet kitchen is always clean, neat, and orderly.
  • Staff Development: Participate in training staff on menu items, ingredients, preparation methods, and unique tastes.
  • Equipment Maintenance: Operate and maintain all department equipment, reporting any malfunctions.
  • Staffing and Scheduling: Review staffing levels to ensure that guest service, operational needs, and financial objectives are met.
  • Recruitment and Performance Management: Recruit, interview, and hire associates, as well as coach and counsel associates as needed and complete performance evaluations.
  • Teamwork and Communication: Foster a positive work environment of employee growth and development, interdepartmental teamwork, and effective communication.
Requirements
  • Culinary Experience: 3-5 years of previous culinary leadership experience in a high-volume, full-service kitchen, preferably in a hotel environment.
  • Culinary Skills: Proven culinary skills, with the ability to lead, develop, and motivate staff.
  • Communication and Organizational Skills: Excellent written and verbal communication skills, as well as organizational skills.
  • Computer Literacy: Computer literate and detail-oriented, with basic mathematical skills and the ability to create and understand financial reports.
  • Certifications: Texas Food Handler/Serve Safe certified food manager is required.
