Job Title: Chef de Cuisine

At Earl Enterprises, we're seeking an exceptional Chef de Cuisine to lead our culinary team at Rock & Reilly's. As a key member of our kitchen staff, you'll be responsible for ensuring the highest quality food service and maintaining a clean and safe working environment.

Key Responsibilities:
  • Coordinate and supervise the work of kitchen staff to ensure efficient service and conformance to standards.
  • Estimate expected food consumption, requisition or purchase supplies, and procure food from storage to maintain inventory levels.
  • Inspect food preparation and serving areas to ensure safe and sanitary food-handling practices.
  • Ensure all food quality standards are maintained consistently, and proper budgets and inventories are maintained.
  • Train workers in food preparation, service, sanitation, and safety procedures to ensure quality standards and service.
  • Control inventories of food, equipment, small-ware, and liquor, and report shortages to designated personnel.
  • Observe and evaluate workers and work procedures to ensure quality standards and service.
  • Assign duties, responsibilities, and work stations to employees in accordance with work requirements.
  • Analyze operational problems, such as theft and wastage, and establish procedures to alleviate these problems.
Requirements:
  • Minimum of two years of Sous-chef experience.
  • Bachelor's Degree (four-year college or university) preferred.
  • Servsafe certified / valid health card.
  • Ability to produce and comprehend spreadsheets and P&L statements.
