Job Summary

As the Executive Chef at Snowmass Club, you will be responsible for overseeing all food and pastry production, including that sold in restaurants, banquet functions, and other outlets. This role requires a strong leader who can develop menus, food purchase specifications, and recipes, while supervising and developing all staff. The ideal candidate will have a passion for creating and producing world-class food items and maintaining the highest professional food quality and sanitation standards.

Key Responsibilities
  • Leadership
    • Develop and motivate Sous Chefs, Line Cooks, and all other culinary staff to their maximum potential
    • Hire and retain top talent for all culinary positions
    • Teach food knowledge to the front of house staff
    • Scheduling and payroll for all culinary staff
    • Promote a positive kitchen culture
  • Creativity
    • Maintain up-to-date knowledge of products, techniques, and industry trends
    • Develop and implement new menu ideas and recipes
    • Maintain the highest quality standards for all food produced
    • Foster creativity among all Food & Beverage staff
  • Menu Development & Food Quality
    • Develop best-in-class menus for all F&B outlets
    • Maintain up-to-date recipe books and plating guides
    • Ensure that all products received are of the highest quality
    • Implement feedback from members of the club
  • Safety & Sanitation
    • Maintain best-in-class kitchen cleanliness
    • Ensure that all staff are exceeding sanitation guidelines
    • Coordinate with SMC Engineering department to keep all equipment in proper working order
    • Maintain organization and cleanliness on loading dock and all storage areas
  • Other Functions
    • Periodically visit dining area to welcome members
Requirements
  • Education and/or Experience
    • Bachelor's degree in Culinary Arts and/or other Hospitality Management degree preferred
    • Food production and management experience
  • Licenses and Special Requirements
    • Certification from American Culinary Association or other professional hospitality associations
    • Food safety certification
