Sous Chef Job Description

Ridgewells Catering is seeking a highly skilled and experienced Sous Chef to join our culinary team. As a key member of our kitchen management team, you will be responsible for the day-to-day operations of the Foods Department.

Key Responsibilities:
  • Assist the Executive Chef in maintaining the highest quality standards and ensuring that food is prepared in an organized, efficient, and timely manner.
  • Manage food production, meeting all established deadlines through effective management of staff within the department.
  • Utilize high sanitation standards and monitor the overall cleanliness of the department, ensuring that staff practices safe and sanitary food handling procedures.
  • Train staff and provide on-the-job instructions to ensure that they are equipped to perform their duties effectively.
  • Maintain recipe standards to ensure that the food produced is consistently good and to specification.
  • Ensure that food is fresh, properly seasoned, and attractively displayed.
  • Responsible for quality assurance of all foods produced by the department, paying close attention to the look, color, texture, and taste.
  • Responsible for adequate staff scheduling to meet workload requirements and monitor staff productivity to maximize efficiency.
  • Maintain food costs that have been predetermined by management and assist with inventory control.
  • Compile, organize, and distribute food orders and labels as necessary for the Foods Department's daily production.
Requirements:
  • Bachelor's degree in culinary science or related certificate is a plus.
  • 2+ years of experience as a Sous Chef is required.
  • Understanding of various cooking methods, ingredients, equipment, and procedures is essential.
  • Excellent record of kitchen and staff management is required.
  • Accuracy and speed in handling emergency situations and providing solutions are necessary.
  • Familiarity with industry's best practices is desired.
  • Working knowledge of various computer software programs (MS Office, etc.) is needed.
