Key Responsibilities:

1. **Ingredient Management:** Oversee the procurement, receipt, and distribution of food service supplies to ensure adequate inventory levels for meal preparation. Train and supervise incarcerated individuals in this area.

2. **Meal Preparation:** Prepare raw ingredients through various methods such as slicing, grating, and chopping. Provide guidance and training to incarcerated individuals assigned to this task.

3. **Meal Serving:** Conduct accurate inventory checks prior to service. Assemble medically prescribed diets in accordance with established menus and portion sizes.

4. **Food Delivery:** Ensure timely delivery of food and supplies to designated serving locations while maintaining proper sanitation and temperature controls.

5. **Supervision:** Directly supervise incarcerated individuals within the Food Service department, ensuring adherence to food production and serving protocols.

6. **Safety and Security:** Utilize security knowledge to maintain a safe environment for both staff and incarcerated individuals. Manage controlled items and conduct regular inspections for contraband.

7. **Food Safety Compliance:** Document food temperatures and maintain sanitation standards.

8. **Training and Development:** Complete required e-learning modules on a quarterly basis.

9. **Documentation:** Utilize ICON for report writing regarding policy compliance and behavior documentation for incarcerated individuals.

Minimum Qualifications:

Applicants must meet at least one of the following criteria:
  1. Two years of full-time experience in mass food production within a commercial, military, hospital, or institutional setting.
  2. A combination of two years of education and/or experience in the aforementioned areas, with thirty semester hours of accredited coursework in dietetics, nutrition, food management, or a related field equating to one year of experience.
  3. Current experience within the state executive branch, including one year of full-time work as a Cook 1, Cook 2, or Baker.

Additional Requirements:

Employees may be required to obtain a Commercial Driver's License (CDL) and endorsements within a specified timeframe after hire.
