Key Responsibilities
  • Department Management: Supervise and train a team of culinary staff, including chefs, cooks, and kitchen assistants. Recommend promotions, wage increases, and disciplinary actions as needed.
  • Menu Development: Collaborate with the Chef de Cuisine to develop and implement new menu items, ensuring they meet corporate standards and policies.
  • Food Safety and Quality: Ensure compliance with health department regulations, maintaining a clean and safe kitchen environment. Conduct regular quality checks to ensure food meets corporate standards.
  • Inventory Management: Monitor food purchasing, staffing, and food preparation to control costs and minimize waste.
  • Customer Service: Ensure excellent communication between front-of-house and back-of-house operations, taking ownership of all responsible areas.
  • Menu Planning: Assist in developing menu changes to ensure variety and food quality, meeting customer demands and preferences.
  • Recipe Development: Help write and cost recipes, developing a collection of recipes in a recipe book.
  • Equipment Maintenance: Oversee the maintenance of kitchen equipment and working conditions, ensuring they meet corporate standards.
  • Training and Development: Provide training and guidance to culinary staff, ensuring they meet corporate standards and policies.
Requirements
  • Education and Experience: Bachelor's degree in Culinary Arts or related field, with a minimum of 5 years of experience in a senior culinary role.
  • Skills and Qualifications: Excellent food technique, cultural knowledge, and menu design skills. Ability to adapt to market conditions and customer demands. Strong communication and problem-solving skills. Computer literacy, including Excel and Word experience.
  • Certifications and Licenses: Food Safety Certification, ServSafe Certification, and any other relevant certifications.
