As the Pastry Kitchen Supervisor, you will play a vital role in assisting the Executive Chef and the Galley Management team in overseeing food preparation and meal service operations within your designated area.

Your responsibilities will include leading a dedicated team of Pastry Chefs and assistants, ensuring the daily food preparation and service activities meet the highest standards of quality, consistency, cost-effectiveness, and sanitation, all in accordance with company and USPH guidelines.

  • Ensure the quality and presentation of all food served.
  • Adhere to all USPH & HACCP protocols in food production and kitchen maintenance.
  • Assist the head cook in guiding and mentoring assistant cooks and trainees.
  • Provide support for service lines as needed.
  • Follow recipes according to company specifications to minimize waste.
  • Collaborate with all team members to facilitate a seamless food delivery process.
  • Comply with environmental separation standards.
  • Perform additional tasks as assigned by senior management.
Qualifications:
  • Associate degree in Hotel Management or equivalent in Culinary Arts.
  • Experience in cruise lines comparable to CCL or at least five-star establishments with multiple dining options, with the last position held as Pastry Chef or equivalent.
  • Proficiency in:
  • Fine dining desserts and advanced plating techniques.
  • Formal dining desserts and presentation techniques.
  • Petite fours, Mignardises, and Friandises.
  • Advanced chocolate and confectionery skills.
  • Creative buffet desserts and presentations.
  • Advanced ice creams, sorbets, and gelato.
  • Expertise in bakery techniques, including French and Italian breads and sourdough.
  • Advanced Viennoiserie.
  • Intermediate sugar and chocolate arts are preferred.
  • Demonstrated knowledge of staff scheduling and duty rosters.
  • Experience in cost management and achieving set financial goals.
  • Strong understanding of hygiene and food safety practices aligned with USPH VSP standards.
