Job Requirements:? At least 3 years of experience as a pastry cook, preferably in a plant-based or vegan restaurant? Experience working in a high-volume environment.? Culinary school is a plus? Comfortable working in a fast-paced kitchen and able to handle multiple tasks at once? Strong communication skills and the ability to work well with others? Knowledge of gluten-free, nut-free, and/or dairy-free baking is a plus? Working knowledge of weighs, measures, various cooking techniques and recipe development? Ability to communicate in English. Spanish is a plus? Ability to establish and maintain good working relationships with business vendors, restaurant employees, and other management members? Must comply and ensure compliance with any & all local, City, State and Federal laws and regulations as required? Availability to work all shifts including nights, weekends, and holidaysDuties and Responsibilities: Set up work area, equipment, and utensils according to restaurant guidelines Follow existing recipes to prepare pastries, cookies, cakes, and other baked goods Develop new and unique recipes for the restaurants menu (plant-based and dairy-free) Test recipes to ensure they meet the restaurants standards for taste, quality, and appearance Maintain a clean and organized kitchen area, including daily cleaning and maintenance of equipment Keep track of inventory levels and order necessary supplies in a timely manner Work in a fast-paced environment and be able to multi-task effectively Work collaboratively with kitchen staff and management to create a cohesive team and ensure efficient service Monitor stocks for baking ingredients such as flour, sugar etc., Maintain solid knowledge of all food products and can skillfully apply culinary/pastry techniques Maintain complete knowledge of and comply with all department policies/service procedures/standards Maintains proper sanitation levels and storage procedures as specified by Health Department and company standards Inspects food receiving, preparation, production, and storage areas to ensure that Health and Safety regulations and rules are always adhered to and resolves any issues with the Pastry Chef Completes/Supervises opening duties such as setting up workstations with required tools, equipment, and supplies; inspecting cleanliness and working conditions of all tools, equipment, and supplies; checking production schedule and pars; establishing priority items for the day when the Pastry Chef is off duty. Prepare any supplies that need to be requisitioned for the operational tasks Completes/Supervises clean and safe closing procedures of the store all the time in support of the Pastry Chef Monitors safety and security procedures Works with the General Manager, Chef and Assistant Chef, to maintain proper daily and periodical cleaning procedures in all areas of the store to meet the highest standards of cleanliness and sanitation. Ensures kitchen equipment is well maintained all the time and reports any issues to the Pastry Chef and share the information Supervises inventory and estimates usage and par levels with the Pastry Chef and reports any issues Receives and checks food orders to ensure they adhere to specifications of quality, temperature, and shelf life Minimize waste and maintain production, cooking and portion controls to attain forecasted food cost or exceed standardsPersonal Appearance:The pastry assistant must be well groomed and neatly dressed in accordance with company dress standards.Physical Actions:The pastry assistant will be required to engage in the following physical actions per shift:Standing: 60%; Walking: 5%; Carrying: 5%; Lifting: 5%; Reaching: 15%; Cleaning: 10%The pastry assistant will be required to lift to fifty pounds. Environmental Exposure:The pastry assistant is exposed to heat, moisture, smoke, and cleaning chemicals used in the kitchen area.The pastry assistant engages in extensive verbal interaction with co-workers and is exposed to potentially frustrating situations. The pastry cook must work well with limited supervision.All cell phones must be left in lockers prior to start of shift.No personal belongings are to be left in lockers at the end of the shift.
