POSITION SUMMARY

Responsible for the overall effectiveness of daily kitchen management. Demonstrates culinary expertise by actively engaging in tasks while overseeing the team and managing all food-related operations. Aims to enhance guest and employee satisfaction while adhering to the operational budget. Oversees all kitchen sectors to guarantee a consistent, high-quality product is delivered. Plays a key role in mentoring and developing team members, including direct reports. Ensures that sanitation and food safety standards are upheld.

CANDIDATE PROFILE

Education and Experience

  • High school diploma or GED; 4 years of experience in culinary, food and beverage, or a related professional field.
OR

  • 2-year degree from an accredited institution in Culinary Arts, Hotel and Restaurant Management, or a related discipline; 2 years of experience in culinary, food and beverage, or a related professional field.

KEY RESPONSIBILITIES

Leading the Culinary Team

  • Employs interpersonal and communication skills to guide, influence, and motivate others; promotes sound financial and business decision-making; exemplifies honesty and integrity; leads by example.
  • Supervises and manages staff, overseeing all daily operations. Understands employee roles sufficiently to perform duties in their absence.
  • Fosters mutual trust, respect, and collaboration among team members.
  • Acts as a role model to illustrate appropriate behaviors.
  • Maintains productivity levels among employees.
  • Encourages employee feedback, maintains an open-door policy, and reviews employee satisfaction metrics to identify and resolve concerns.

  • Establishes and nurtures open, collaborative relationships with team members.
  • Recognizes and celebrates team achievements publicly.
  • Leads shifts while personally preparing food items and fulfilling requests based on specified requirements.
  • Oversees and coordinates the activities of cooks and kitchen staff engaged in food preparation.

Ensuring Culinary Standards and Responsibilities are Met

  • Develops, designs, or creates new applications, ideas, relationships, systems, or products, including artistic contributions.
  • Supervises kitchen shift operations and ensures adherence to all Food & Beverage policies, standards, and procedures.
  • Recognizes superior quality in products, presentations, and flavors.
  • Ensures compliance with food handling and sanitation regulations.
  • Follows proper food handling procedures and maintains appropriate temperatures for all food products.
  • Ensures staff maintain required food handling and sanitation certifications.
  • Assists the Executive Chef with all kitchen operations.
  • Maintains standards for purchasing, receiving, and food storage.
  • Prepares and cooks a variety of foods, either regularly or for special events.
  • Checks the quality of raw and cooked food products to ensure standards are met.
  • Assists in determining food presentation and creates decorative displays.

Delivering Exceptional Customer Service

  • Provides services that exceed expectations for customer satisfaction and retention.
  • Manages daily operations, ensuring quality standards and customer expectations are consistently met.
  • Enhances service by communicating effectively and assisting individuals in understanding guest needs, providing guidance, feedback, and individual coaching as necessary.
  • Observes employee service behaviors and provides constructive feedback.
  • Aims to improve service performance continually.
  • Emphasizes guest satisfaction in all departmental meetings and focuses on ongoing improvement.
  • Empowers employees to deliver outstanding customer service.
  • Sets a positive example for guest relations.

Achieving Culinary Goals

  • Achieves and surpasses goals, including performance, budget, and team objectives.
  • Develops specific goals and plans to prioritize, organize, and accomplish work tasks.
  • Understands the impact of departmental operations on overall financial goals and objectives and manages to achieve or exceed budgeted targets.
  • Trains employees in safety protocols.

Managing Human Resource Activities

  • Identifies the developmental needs of others and coaches, mentors, or otherwise assists in improving their knowledge or skills.
  • Identifies educational needs, develops formal training programs, and instructs others.
  • Manages payroll processes.
  • Brings issues to the attention of the department manager and Human Resources as necessary.
  • Utilizes the Labor Management System to effectively schedule according to business demands and track employee time and attendance.
  • Reviews staffing levels to ensure guest service, operational needs, and financial objectives are met.
  • Participates in employee progress and disciplinary procedures.
  • Contributes to the employee performance appraisal process, providing feedback as needed.
  • Participates in developing and implementing corrective action plans.

Additional Responsibilities

  • Provides information to supervisors, co-workers, and subordinates through various communication methods.
  • Analyzes information and evaluates results to select the best solutions and resolve issues.
  • Attends and participates in all relevant meetings.
The salary range for this position is $82,000.00 to $105,000.00 annually.
