Job Overview

Jay Peak Resort is seeking a highly skilled and experienced Sous Chef to join our culinary team. As a key member of our kitchen staff, you will be responsible for coordinating the activities of and directing the training of chefs, cooks, and other kitchen workers to ensure an efficient and profitable food service.

Key Responsibilities
  • Plan and implement menus, utilizing food surpluses and leftovers to minimize waste and maximize profitability.
  • Estimate food consumption and purchase or requisition foodstuffs and kitchen supplies to ensure adequate inventory levels.
  • Review menus, analyze recipes, and determine food, labor, and overhead costs to assign prices to menu items.
  • Direct food apportionment policy to control costs and ensure efficient food production.
  • Supervise cooking and other kitchen personnel, coordinating their assignments to ensure timely and economical food production.
  • Monitor food preparation and cooking methods, portion sizes, and garnishing to ensure consistency and quality.
  • Test cooked foods to ensure consistent quality and develop new recipes to enhance the menu.
  • Familiarize new staff with kitchen practices and oversee the training of cook apprentices.
  • Establish and enforce nutrition and sanitation standards for the restaurant.
  • Maintain a clean and organized work environment.
Supervisory Responsibilities

Directly supervise up to 10 employees in the kitchen, carrying out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees, planning and assigning work, appraising performance, rewarding and disciplining employees, addressing complaints, and resolving problems.

Requirements
  • Bachelor's Degree (B.A.) or equivalent from a four-year college or technical school, or two to four years of related experience and/or training, or an equivalent combination of education and experience.
  • Ability to read and write common business levels of correspondence, memos, and formatted letters, and to effectively present information in one-on-one and group situations to customers, clients, and other employees.
  • Ability to calculate figures and amounts, such as discounts, interest, and commissions, proportions, percentages, area, circumference, and volume, and to apply concepts of basic algebra and geometry.
  • Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form, and to deal with problems involving several concrete variables in standardized situations.
  • Basic understanding of computer use, email, and Microsoft Office Word.
  • Must be ServSafe certified, with opportunities to attend the seminar provided in some cases.
