Job Summary

We are seeking a highly skilled and experienced Sous Chef to join our team at Jay Peak Resort. As a key member of our culinary team, you will be responsible for coordinating the activities of our chefs, cooks, and kitchen staff to ensure efficient and profitable food service.

Key Responsibilities
  • Menu Planning and Execution
    • Participate in planning menus that take into account probable guest numbers, marketing conditions, and popularity of various dishes.
    • Estimate food consumption and purchase or requisition foodstuffs and kitchen supplies.
  • Food Cost Control
    • Review menus, analyze recipes, and determine food, labor, and overhead costs.
    • Assign prices to menu items and direct food apportionment policy to control costs.
  • Team Management
    • Supervise cooking and other kitchen personnel and coordinate their assignments to ensure economical and timely food production.
    • Observe methods of food preparation and cooking, portion sizes, and garnishing to ensure food is prepared in the prescribed manner.
  • Quality Control
    • Test cooked foods by tasting and smelling them to ensure consistent quality.
    • Devises special dishes and develops recipes.
  • Training and Development
    • Familiarize newly hired chefs and cooks with kitchen practices and oversee training of cook apprentices.
  • Sanitation and Safety
    • Establish and enforce nutrition and sanitation standards for the restaurant.
    • Maintain an organized and clean work environment.
  • Leadership
    • Directly supervise up to 10 employees in the kitchen and carry out supervisory responsibilities in accordance with the organization's policies and applicable laws.
