Job Summary

We are seeking a highly skilled and experienced Sous Chef to join our culinary team at Jay Peak Resort. As a key member of our kitchen operations, you will be responsible for coordinating the activities of our chefs, cooks, and other kitchen staff to ensure efficient and profitable food service.

Key Responsibilities
  • Plan and implement menus, utilizing food surpluses and leftovers to minimize waste and optimize profitability.
  • Estimate food consumption and purchase or requisition foodstuffs and kitchen supplies as needed.
  • Review menus, analyze recipes, and determine food, labor, and overhead costs to assign prices to menu items.
  • Direct food apportionment policy to control costs and ensure efficient food production.
  • Supervise cooking and other kitchen personnel, coordinating their assignments to meet culinary standards.
  • Monitor food preparation and cooking methods, portion sizes, and garnishing to ensure consistent quality.
  • Test cooked foods to ensure consistent quality and develop new recipes to enhance our menu offerings.
  • Familiarize new staff with kitchen practices and oversee the training of cook apprentices.
  • Maintain high standards of nutrition and sanitation in the kitchen and enforce compliance with all relevant regulations.
  • Supervise up to 10 employees in the kitchen, carrying out supervisory responsibilities in accordance with our organization's policies and applicable laws.
Requirements
  • Must be ServSafe certified, with opportunities to attend the seminar provided in some cases.
  • Ability to be creative and willing to try new recipes and ideas.
