Position Overview:

The Pastry Kitchen Manager is tasked with overseeing the complete operations of the pastry section within the culinary environment. This role is pivotal in ensuring that the culinary standards of Hard Rock International are consistently met, with a focus on presentation, cooking accuracy, portion control, and timely service.

Key Responsibilities:

  • Demonstrate a thorough understanding of the pastry budget and financial management.
  • Control food costs and related expenditures in alignment with financial expectations.
  • Manage staff schedules effectively to meet budgetary and operational forecasts.
  • Uphold the highest standards of health, safety, and food preparation hygiene.
  • Support the team in executing systems and processes that ensure brand standards are met consistently.
  • Assist senior management in cultivating a cohesive team that shares a vision for the success of the pastry section.
  • Develop the kitchen staff in all areas of pastry execution, from strict adherence to recipes to banquet service.
  • Encourage a customer-centric environment where team members prioritize guest satisfaction.
  • Recruit, train, motivate, evaluate, and supervise staff to ensure they have the necessary resources to meet objectives.
  • Understand departmental objectives, standards, and guidelines to provide effective supervision.
  • Ensure proper storage of food items to maintain quality and comply with health regulations.
  • Collaborate with the purchasing department to guarantee high-quality food products.
  • Meet budgetary guidelines for food costs, labor costs, and miscellaneous expenses.
  • Participate in meetings and complete assigned follow-ups.
  • Maintain cleanliness and sanitation of work and public areas.
  • Perform additional duties as required.

Qualifications:

  • Minimum of 10 years in the hospitality sector, specifically in culinary operations.
  • At least 5 years of experience in kitchen management.

Additional Requirements:

  • Must obtain and maintain valid licenses and certifications as per regulations.
  • Possess all necessary local food management and safety certifications.
  • Pass a background check and drug screening.
  • Must be at least 21 years of age.
  • Experience in launching new properties or outlets is highly preferred.

Knowledge and Skills:

  • Familiarity with federal, state, and local laws, codes, and regulations.
  • Understanding of health, sanitation, and licensing ordinances.
  • Knowledge of food products, standard recipes, and proper preparation techniques.
  • Proficiency in relevant computer programs and applications.
  • Awareness of safety and sanitation practices in food and beverage service.
  • Comprehensive understanding of kitchen operations.
  • Strong organizational skills and budgeting experience.

Physical Requirements:

  • Ability to move throughout the kitchen and café for extended periods.
  • Occasionally lift, push, pull, or carry objects weighing up to 10 pounds.
  • Utilize kitchen tools including knives, slicers, and choppers.
  • Review and comprehend recipes and documentation.
  • Inspect the quality of food items regularly.
  • Exhibit enthusiasm and professionalism in all interactions.
  • Communicate effectively, both verbally and in writing.
