Job Summary

We are seeking an experienced Executive Sous Chef to join our team at Tarrytown House Estate. As a key member of our culinary team, you will be responsible for the daily oversight of our culinary operation, supervising and coordinating the production of buffets, a la carte, banquets, and other special functions.

Key Responsibilities
  • Assume operational responsibility of the culinary division in the absence of the Executive Chef.
  • Assist the Executive Chef with departmental human resource functions, including recruitment, training, and performance management.
  • Maintain a clean and sanitary environment, ensuring compliance with all local and state codes.
  • Supervise and participate in the activities of all outlet and banquet kitchens, including food preparation and ware washing.
  • Coordinate the activities of all kitchens with all operating departments to ensure the overall success of the conference center.
  • Develop and implement menus for buffets, a la carte, banquets, and other functions, ensuring high-quality cuisine and presentation.
  • Assist the Executive Chef in establishing recipes for all cuisine prepared by the culinary staff, ensuring consistency and quality.
  • Review daily agenda sheets, establish specific objectives for culinary staff, and inspect the quality of food products used to prepare cuisine.
  • Prepare and provide required reports to the Executive Chef, including food and labor cost reports.
  • Mentor and train staff on new recipes, menus, production systems, and sanitation standards.
  • Assist the Executive Chef in food and menu development, including knowledge of seasonal items, food trends, and ethnic cuisine.
  • Assist with labor control, including punch-in/punch-out and enforcing breaks, scheduling for BEOs, pop-ups, customer counts, proactive with PTOs, sick, and vacations.
  • Maintain a high standard of cleanliness throughout the kitchen operation, report any malfunctions with kitchen equipment, and organize all equipment and walk-ins.
  • Ensure safety observation, first aid kit, emergency situations, hazardous conditions, and up-to-date certifications, including CPR, TIPS, and Food Safety Certified NYS.
Requirements

This position requires a minimum of five years of job-related experience and a high school diploma. A culinary degree or ACF certification is preferred, and three years of supervisory experience are required. Serve Safe Certified is a must.
