Position Summary

The Assistant Culinary Manager will ensure the seamless operation of the kitchen during their designated shifts. This role involves overseeing food preparation in accordance with the Chef's specifications and providing training to kitchen staff to uphold the high standards of our establishment.

Key Responsibilities

  • Support and cover shifts across various dining venues, ensuring consistent service quality.
  • Oversee the timely execution of breakfast, lunch, and dinner services.
  • Participate in the Culinary apprenticeship program, offering coaching and hands-on demonstrations.
  • Manage and schedule the Stewarding department to maintain operational efficiency.
  • Collaborate with the restaurant manager to address staff performance, guest feedback, and menu updates.
  • Train kitchen staff to meet established performance standards.
  • Ensure a safe working environment for all kitchen personnel.
  • Report any maintenance issues to the Engineering Department promptly.
  • Maintain cleanliness and organization of all kitchen production and storage areas.
  • Assist in menu development and the introduction of new dishes.
  • Conduct inventory management and ensure food cost efficiency.
  • Ensure compliance with vendor standards and quality control.

Qualifications

  • High school diploma or equivalent required.
  • A minimum of four years of experience in a high-end restaurant or hotel setting.
  • Culinary degree or equivalent preferred.

Supervision

This position involves direct supervision of the culinary team, including training, performance evaluation, and addressing operational challenges. The Assistant Culinary Manager will work closely under the guidance of the Executive Chef, with regular feedback and support available.

Work Environment

The role requires the ability to perform physically demanding tasks, including standing for extended periods, lifting up to 50 lbs, and working in a fast-paced kitchen environment.
