Position Summary
The Assistant Culinary Leader will ensure the seamless functioning of the kitchen during their designated shifts. This role involves preparing dishes in accordance with the Chef's standards and mentoring kitchen staff to uphold the hotel's culinary benchmarks.
Salary Information
The anticipated salary range for this role is $70,000-$75,000, with actual compensation based on experience and budget considerations. All salaried positions are eligible for bonuses.
Key Responsibilities
• Provide support and coverage in various dining venues as needed.
• Oversee breakfast, lunch, or dinner service during assigned shifts.
• Facilitate the Culinary apprenticeship program through coaching and demonstrations.
• Manage and schedule the Stewarding department.
• Collaborate with the restaurant manager on staff performance and guest feedback.
• Train kitchen staff to meet established performance standards.
• Ensure a safe working environment for all kitchen personnel.
• Report any maintenance issues to the Engineering Department.
• Maintain cleanliness in all kitchen production and storage areas.
• Communicate any deviations from standards to the Executive Chef.
• Assist in creating menu descriptions for new dishes and ensure timely rollout to Front of House staff.
• Participate in menu item production and development across all outlets.
• Conduct inventory checks and manage food cost considerations in menu planning.
• Enter new menu items into the kitchen management system.
• Monitor staffing levels in relation to budget and operational needs.
• Oversee culinary payroll processes.
• Inspect product quality and pricing to ensure optimal value.
• Ensure the use of approved vendors whenever feasible.
• Assist in organizing kitchen supplies and ensuring proper food rotation.
Qualifications
• High school diploma or equivalent required.
• Minimum of four years of experience in a high-end restaurant or hotel setting.
• Culinary degree or equivalent training preferred.
Supervisory Responsibilities
This position involves direct supervision of the culinary team, including training, performance evaluation, and addressing any operational issues. The Assistant Culinary Leader will work closely under the guidance of the Chef de Cuisine, with tasks assigned based on established procedures.
Work Environment
• Must be able to perform physical tasks such as reaching, crouching, and standing for extended periods.
• Regularly work in hot and humid conditions, with potential exposure to slippery surfaces.
• Ability to lift, push, or pull up to 50 lbs, either independently or with assistance.
