FLSA Status: Non-Exempt

Job Summary: Responsible for preparing a diverse range of food items for cooking and incorporation into various menu offerings, including meats, poultry, vegetables, sauces, dressings, stocks, and breads, as outlined in the Daily Prep List.

Essential Duties & Responsibilities:

  • Uphold and embody the core values and mission of Phil's BBQ.
  • Consult the daily prep list and coordinate with the Kitchen Manager or Assistant Kitchen Manager at the beginning of each shift regarding assigned tasks and inventory levels.
  • Adhere to standard portion sizes, cooking techniques, quality benchmarks, and kitchen policies and procedures.
  • Maintain cleanliness and sanitation of workstations, surfaces, tables, shelves, and kitchen equipment.
  • Properly store and label food in designated containers to avoid contamination and spoilage.
  • Prepare and season various meats, including poultry, beef, and pork, for cooking or serving.
  • Monitor and document food temperatures in storage and holding areas.
  • Wash, peel, and cut various ingredients, such as vegetables, in preparation for cooking or serving.
  • Organize food trays in warming areas for immediate service or store them appropriately.
  • Measure and weigh ingredients accurately.
  • Utilize kitchen appliances to clean, peel, slice, and prepare food items.
  • Report any safety hazards or equipment issues to management and colleagues immediately.
  • Prepare proprietary sauces, dressings, and batters as required for menu items.
  • Follow standard recipes and preparation techniques meticulously.
  • Assist in opening and closing procedures of the kitchen.
  • Participate in scheduled employee meetings and contribute suggestions for operational improvements.
  • Support kitchen staff with various tasks as needed to ensure efficient operations.
  • Maintain accurate records of food usage.
  • Load and organize dishes and utensils in the dishwashing area.
  • Stock and maintain the salad bar and vegetable preparation items.

Tools & Technology:

  • Commercial kitchen equipment including blenders, mixers, ovens, and fryers.
  • Food safety labeling systems and employee scheduling software.

Minimum Qualifications & Physical Requirements:

  • Ability to communicate effectively in English (Spanish is a plus).
  • Must be authorized to work in the USA.
  • Possess a valid Food Handler Card (certification available if needed).
  • Ability to stand for extended periods and lift objects weighing between 5-45 lbs.
  • Must be able to work in a fast-paced kitchen environment with varying temperatures.
