Esta persona será responsable de apoyar al Chef Ejecutivo en la supervisión de las operaciones de la cocina mientras mantiene un entorno de trabajo seguro y sanitario para el personal.
Responsabilidades Clave:
Asistir al Chef Ejecutivo para asegurar el cumplimiento de todos los requisitos de sanidad, ServSafe, seguridad, producción y comercialización
Motivar, capacitar, desarrollar y dirigir a los empleados de la cocina para lograr los objetivos de la operación a satisfacción de los clientes, clientes y sectores
Asegurar que los alimentos de alta calidad sean preparados y presentados de manera creativa y rentable
Asistir en todas las fases de planificación, pedidos, inventario y preparación de alimentos
Apoyar la gestión de controles de costos y controlar los gastos para la cuenta
Implementar nuevos programas culinarios en conjunto con los equipos de marketing y culinaria
Realizar otras tareas según se asignen
Calificaciones:
Título de B.S. en Artes Culinarias, Tecnología/Gestión de Servicios Alimentarios o campo relacionado; o Título de A.O.S. en Artes Culinarias con capacitación especializada adicional
3-5 años de experiencia culinaria relevante
Dominio de una amplia variedad de posiciones y estaciones de cocina
Capacidad para pensar rápidamente, así como crear, producir y servir sobre la marcha
Conocimiento de costos de alimentos y cómo se relacionan con una cocina, identificación de productos y calidad
Excelentes habilidades interpersonales, de servicio al cliente y de comunicación oral/escrita
Certificación de sanidad en servicios alimentarios aplicada, SERVSAFE y/o certificación de directrices federales HACCP
Comprensión demostrada de las tendencias y el mercado culinario actuales y presentación creativa de alimentos preferida
