Position Summary:

The Beverage Manager/Sommelier is responsible for overseeing all beverage operations, including events, bars, lounges, and beverage service across restaurants, pool, and beach areas. This role involves researching and developing beverage product utilization, establishing service standards, enhancing concepts, improving revenue, and implementing cost controls throughout the property. Collaboration with restaurant management is essential to ensure member satisfaction and operational efficiency.

To consistently exceed guest expectations and deliver the highest quality of service, additional responsibilities may be assigned as necessary.

Key Responsibilities:

  • Directly report to the Director of Food & Beverage, focusing on creating and maintaining a professional beverage operation while managing expenses.
  • Lead by example with a hands-on management approach.
  • Train and mentor beverage team members on best practices in bars and restaurants.
  • Foster an open-door policy to encourage team communication.
  • Assist members and guests with wine selections and pairings during dinner service.
  • Stay informed on current trends in spirits, beer, and wine to maintain a dynamic beverage program.
  • Provide leadership in executing and measuring guest service standards within Beverage Operations.
  • Maintain inventory levels in accordance with revenue sales.
  • Ensure comprehensive knowledge of all beverage offerings, including liquor brands, beers, wines, and presentation standards.
  • Establish supply par levels for beverages and equipment.
  • Implement best practices for staffing levels relative to guest service standards and business volume.
  • Develop and maintain beverage menus and drink recipes.
  • Conduct training sessions for staff on current beverage programs and promotions.
  • Perform regular quality checks of all bars to ensure service standards are met.
  • Set departmental standards for cleanliness, training, and guest service.
  • Collaborate with the Inventory Manager for quality control in ordering and inventory management.
  • Assist with monthly beverage inventory processes.
  • Ensure high standards of sanitation and hygiene are maintained throughout the club.
  • Work with the Catering Department to enhance beverage offerings for events.
  • Understand and comply with Florida Liquor Laws and regulations.
  • Prepare budget data and monitor financial results to meet financial goals.
  • Participate in food and beverage team meetings and training sessions.
  • Engage with beverage suppliers for training resources and product knowledge.
  • Develop and maintain effective communication and relationships across all club areas.
  • Establish and maintain cleaning and maintenance schedules for bar areas.
  • Maintain a visible presence in dining and bar areas during service to enhance guest experience.
  • Perform other duties as assigned by leadership.

Qualifications:

  • Bachelor's degree in Hospitality Management preferred, with four years of luxury service and management experience; or
  • Three to four years of experience in a managerial role within a high-volume luxury hotel or resort.
  • Sommelier Level 1 Certification.
  • Strong knowledge of food and beverage pairings.
  • Understanding of pricing, budgets, and cost controls.
  • Familiarity with point of sales systems.

Licenses and Certifications:

  • Responsible Vendor Certification.
  • Food Handler Certification.

Skills and Attributes:

  • Exceptional interpersonal, managerial, and leadership skills.
  • Strong organizational and time management abilities.
  • Ability to manage change effectively.
  • Clear communication skills, both written and verbal.
  • Experience in training and developing staff.
  • Proficient in Microsoft Office applications.
