About the Role

We are seeking a highly skilled and experienced Executive Chef to lead our culinary team at the Delta Sky Club in BNA. As a key member of our Compass Group, North America team, you will be responsible for overseeing all culinary functions, ensuring exceptional food quality, and managing a team of dedicated associates.

Key Responsibilities
  • Plan and execute regular and modified menus in collaboration with our culinary leadership team.
  • Follow standardized recipes, portioning, and presentation standards, and complete daily production worksheets and waste log sheets.
  • Train kitchen staff in food preparation, safe handling, operation of equipment, food safety, and sanitation based on Company and regulatory standards.
  • Establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas.
  • Maintain inventory of all supplies, staying within established guidelines while ensuring necessary products are available when needed.
  • Make decisions regarding leftover food products, staying within Company guidelines.
  • Comply with federal, state, and local health and sanitation regulations and department sanitation procedures.
Requirements
  • A.S. or equivalent experience.
  • Minimum of three to five years of progressive culinary/kitchen management experience, depending on formal degree or training.
  • Fine dining, Executive Chef leadership experience is a must.
  • High volume, complex foodservice operations experience is highly desirable.
  • Demonstrated success leading an engaged, focused culinary team, with a track record of building great teams.
  • Comprehensive knowledge of food and catering trends, with a focus on quality, production, sanitation, food cost controls, and presentation.
  • Business systems savvy and reporting acumen (to include MS Office).
  • ServSafe certified is highly desirable.
