About the Role

We are seeking a highly skilled and experienced Sous Chef to join our team at Ryman Hospitality Properties. As a key member of our culinary team, you will be responsible for creating and executing menu recipes that meet the high standards of our Ole Red brand.

Key Responsibilities
  • Menu Development and Execution: Develop and execute menu recipes that meet the Ole Red brand standards, ensuring exceptional quality and presentation.
  • Culinary Team Leadership: Lead and manage a team of culinary staff, providing guidance and support to ensure exceptional standards of excellence and guest experience expectations are met.
  • Inventory Management: Manage inventory levels of food, beverage, and non-food products, ensuring accurate ordering and minimizing waste.
  • Financial Management: Manage culinary labor costs and ensure compliance with budgeted cost of goods, meeting or exceeding financial goals and objectives.
  • Training and Development: Train and develop culinary staff in all aspects of the business, preparing them for future growth opportunities within the company.
  • Regulatory Compliance: Ensure understanding and compliance with all food- and beverage-related federal, state, and local rules and regulations, as well as Ole Red policies and procedures.
  • Loss Prevention: Uphold Ole Red's standard operating procedures, including strict controls over loss prevention.
  • Decision Making: Make decisions in the absence of the Executive Sous Chef and General Manager, ensuring seamless operation of the kitchen.
Requirements
  • Education: High school diploma or equivalent required; Bachelor's degree in Culinary or Hospitality preferred.
  • Experience: 3+ years of restaurant culinary experience required; 2+ years of culinary management experience preferred.
  • Knowledge and Skills: Intermediate computer skills with Microsoft Office and familiarity with POS system functionality; excellent verbal and written communication skills; financial background with proven ability to identify opportunities for revenue enhancement and fiscal management.
Licenses and Certifications
  • ServSafe Certification: Required.
  • Airport SIDA Badge: Must meet all requirements to receive the required airport SIDA badge, including successful completion of a background check.
