Position Overview

POSITION: HEAD KITCHEN SUPERVISOR

Department: Camp

Staffing Classification: Seasonal

Reports To: Camp Director

FLSA Status: Exempt

ROLE SUMMARY:

The Head Kitchen Supervisor is tasked with delivering nutritious, appetizing, and cost-effective meals for campers and staff (approximately children and teens, and 35 adults). This role includes overseeing procurement, meal preparation, nutritional standards, service, sanitation, personnel management, and record-keeping.

KEY RESPONSIBILITIES:

  1. Assess kitchen and food preparation equipment needs for the upcoming season, planning for necessary purchases and repairs before camp commences.
  2. Collaborate with food consultants to design menus for all meals that accommodate dietary restrictions and special needs, in conjunction with the Camp Nurse, Head Counselor, and Camp Director.
  3. Establish relationships with food suppliers and coordinate with the Camp Director on payment methods. Order food and supplies based on enrollment figures and manage delivery logistics.
  4. Work alongside the Camp Director to maintain food and kitchen expenditures within budgetary constraints.
  5. Assist the Camp Director in creating the kitchen staff schedule and meal timings to align with camper and staff activities.
  6. Support the Camp Director in recruiting kitchen personnel. Train and organize kitchen staff prior to the camp's start. Monitor kitchen staff performance throughout the season, ensuring a positive work environment. Conduct evaluations for kitchen staff at the season's conclusion.
  7. Oversee the setup of kitchen facilities and dining areas. Ensure proper storage of all food and equipment at the end of the season.
  8. Comply with all State and Local Board of Health regulations regarding food handling, service, and storage. Be available for inspections as required.
  9. Supervise the preparation of three meals daily, along with morning and afternoon snacks.
  10. Maintain a clean and safe kitchen, dining, and service area, ensuring appealing presentation for all meals.
  11. Perform additional tasks as necessary.
Qualifications:

REQUIREMENTS:
  1. Experience in camp, institutional, or large-scale food service environments.
  2. Proficiency in ordering, inventory management, budgeting, food preparation, buffet service, cleaning, and operating commercial kitchen equipment.
  3. Ability to adapt menus and prepare meals to meet special dietary and health requirements.
  4. Knowledge of current health and safety regulations and practices.
  5. Demonstrated supervisory experience.

PHYSICAL REQUIREMENTS:

This role involves standing, walking, bending, kneeling, reaching, and other physical activities related to setting up heavy equipment. It may also include lifting, carrying, or moving objects and equipment weighing over 50 pounds.

SUPERVISION:

Supervision is provided by the Camp Director.

EMPLOYMENT DURATION:

This is a seasonal position lasting approximately three months, typically from late spring to late summer.
