About the Role

The Sous Chef will be responsible for overseeing the culinary operations of the Inn at Southall, ensuring the highest levels of quality and control in all aspects of food preparation and presentation.

Key Responsibilities
  • Oversight of the all-day dining line, serving breakfast, lunch, and dinner for public spaces and in-room dining.
  • Management of the prep kitchen, pastry kitchen, and chocolate room on the main floor of The Inn.
  • Supervision of the commissary space, including shipping, receiving, distribution, and storage, as well as the in-house butchery.
  • Leadership of the team member cafeteria, operating 7 days a week and serving approximately 150 people per day.
  • Development and implementation of dish and technique creation, scheduling, inventory, ordering, and culinary training programs.
  • Management of kitchen staff, ensuring the highest levels of quality and control in all aspects of food preparation and presentation.
  • Education, nurturing, and supervision of all members of the culinary department, as well as other departments, to enhance the culinary program.
  • Ensuring all operations of the inn operate in a clean, sanitary, and organized fashion, with proper receipt, storage, and handling of products.
  • Management of labor costs, food costs, and operating costs, monitoring and maintaining control depending on season and volume.
Requirements
  • Minimum of 3 years of experience in the industry, with a focus on fine dining.
  • Minimum of 2 years of management experience in a kitchen.
  • Minimum of 1 year of experience working in a high-end hotel or resort, with experience in Relais and Chateaux and Forbes standards preferred but not required.
  • Opening experience preferred but not required.
  • Conversational Spanish preferred but not required.
Education and Requirements
  • Culinary degree preferred but not required.
  • Ability to push, pull, and lift 50 pounds.
  • Availability to work weekends, evenings, and/or holidays.
  • Ability to walk and stand for prolonged periods as needed.
