Executive Chef Assistant

We are seeking a highly skilled and experienced Sous Chef to join our team at Red Mesa Group. As a key member of our culinary team, you will be responsible for supervising daily back of house restaurant operations and ensuring the highest quality of food and service.
Key Responsibilities:- Assist the Executive Chef in executing their responsibilities and provide leadership when they are not present.
- Directly supervise and manage the kitchen staff, including hourly and salaried managers.
- Inspect the quality of food and processes to ensure compliance with existing and implemented standards.
- Attend regular meetings with the restaurant, kitchen, and operations teams to ensure seamless service and functions.
- Manage kitchen staff and coordinate food orders, supervise food preparation and cooking, and check food plating and temperature.
- Establish portion sizes, schedule kitchen staff shifts, and price menu items in collaboration with the Restaurant Manager.
- Order food supplies and kitchen equipment as needed, train kitchen staff on prep work and food plating techniques, and manage product storage in compliance with safety practices.
- Oversee purchasing to stay within budget, assist with weekly inventory execution, and maintain sanitation and safety standards in the kitchen area.
- Hire and train new kitchen team members.
- Proven work experience as a Sous Chef, Restaurant Manager, or Head Chef.
- Hands-on experience with planning menus and ordering ingredients.
- Knowledge of a wide range of recipes and familiarity with kitchen sanitation and safety regulations.
- Excellent organizational skills, conflict management abilities, and the ability to manage a team in a fast-paced work environment.
- Flexibility to work during evenings and weekends, and certification from a culinary school or degree in Restaurant Management is a plus.
