JOB SUMMARY:
The Nutritional Services Manager is responsible for delivering direct nutrition services to patients.

This role ensures that high-quality food service is prepared and provided in compliance with current applicable state and federal regulations, as well as facility policies and procedures, under the guidance of the Administrator, Dietitian, and/or Food Services Director.


ESSENTIAL JOB DUTIES:
To succeed in this position, an individual must effectively perform each essential function, with or without reasonable accommodation.

  • Collaborate with the facility's dietitian to implement suggested modifications, assist in planning regular and specialized diet menus as prescribed by the attending physician, and ensure food availability for cooks.
  • Order, prepare, and serve meals that are appealing and appetizing while adhering to portion control procedures and therapeutic diets according to scheduled menus and sanitary regulations.
  • Inspect special diet trays for accuracy, portion control, and appealing presentation, while evaluating the kitchen and dietary area for cleanliness, supply control, and safety.
  • Recognize and respond to dietary emergencies; document observations, interventions, and outcomes.
  • Interpret department policies and procedures for employees, patients, families, visitors, and governmental agencies.
  • Assist in developing methods to assess the quality and quantity of food served.
  • Assist and monitor the tray line.
  • Make purchases for specific menus as necessary.
  • Oversee meal monitoring.
  • Provide instruction and assistance to cooks as needed.
  • Participate in the patient feeding process.
  • Review menus prior to food preparation.
  • Meet with dietary personnel to identify and rectify issues, and enhance service quality.
  • Ensure food service is adequately maintained to meet patient needs.
  • Assist in formulating a plan of correction for dietary deficiencies noted during inspections.
  • Ensure compliance with safety and sanitation procedures.
  • Instruct and assist cooks/dietary aides as required.
  • Support the orientation, training, and scheduling of employees as directed.
  • Document in medical records as necessary.
  • Complete production sheets for the following day.
  • Complete forms, reports, evaluations, and studies to ensure control of equipment and supplies.
  • Other duties as assigned.

JOB REQUIREMENTS:

  • Successfully complete required training.

Reliable transportation Required Computer Software/Equipment used:

  • Various operating systems.
  • Standard office equipment.
  • Microsoft Word, Excel, Outlook.
  • Desktop and laptop computers.

REQUIRED QUALIFICATIONS:

Education:
o High school diploma or equivalent required.
o Associate's or higher degree in food service management or hospitality, including food service or restaurant management, from an accredited institution.
o Bachelor's Degree in Dietetics preferred.

Experience:
o Minimum of one (1) year of dietary experience in a supervisory role, preferably in a hospital, skilled nursing care facility, or other medical setting.
o Three (3) years of experience in a hospital, nursing care facility, or other related medical environment.

  • License/Certification(s): o Dietary Manager Certification is recommended; however, if not certified, the employee MUST provide evidence of successful completion of an approved Certified Managers course or MUST be eligible and enrolled in an approved Certified Manager's course by the end of the probation period.

SUPERVISORY RESPONSIBILITIES:

  • Supervises dietary personnel.
  • Achieves department objectives by supervising staff; establishes performance goals; sets deadlines in line with the company's plans and vision.
  • Develops personal growth opportunities; provides constructive feedback and coaching.
  • Organizes workflow; ensures employees understand their duties or delegated tasks.
  • Monitors employee productivity; provides constructive feedback and coaching.
  • Maintains staff by recruiting, orienting, and training employees.
Occasionally requires manager's direction due to extraordinary circumstances.

  • Ability to lift up to 40 pounds.
  • Subject to standing, walking, sitting, bending, reaching, kneeling, pushing, and pulling.
  • Work is typically performed in a standard skilled nursing facility; well-lit and temperature-controlled.
  • Above-average conversational noise is frequent.
  • Position may require flexible hours, unscheduled overtime, or occasional weekend work.
