Employee and Labor Management

Oversee a diverse non-exempt workforce (front and back of house). Foster a positive and collaborative work environment that encourages open communication, consistency, fairness, and continuous learning while aligning with the mission of Harvard University Dining Services (HUDS).
  • Provide leadership and guidance to a diverse unionized workforce, ensuring a collaborative and communicative atmosphere.
  • Assist in the recruitment and hiring process based on staffing patterns and budgetary constraints. Aid in the completion of probationary employee evaluations as required.
  • Collaborate with the Culinary Development Committee (CDC) and HUDS' culinary team to design and implement training programs to enhance the skills of cooks and kitchen staff.
  • Clearly communicate performance expectations and work rules through regular coaching, mentoring, and staff meetings.
  • Work with Human Resources to implement corrective actions and participate in grievance processes while adhering to the Collective Bargaining Agreement and University policies.
  • Ensure accurate maintenance of the timekeeping system in collaboration with the Management Team. Process timecards and absence requests in accordance with HUDS policies.
Physical Requirements
  • This position often requires long hours and a variety of tasks.
  • Must be able to lift approximately 20 to 30 pounds, bend, stoop, and perform other physical activities.
  • Ability to stand for extended periods is necessary.
Working Conditions
  • Availability to work evenings, weekends, and holidays as needed.
  • Exposure to wet floors, temperature extremes, and high noise levels.

Position Overview

Operational Management

Under the guidance of the CDC, lead and motivate a team of non-exempt culinary professionals in a campus café, delivering an exceptional hospitality experience that surpasses customer expectations while adhering to food quality and cost standards and safety regulations.
  • Ensure the daily preparation and presentation of innovative, delicious, and sustainable food experiences while meeting cost targets.
  • Implement all HUDS and University quality assurance policies related to food, sanitation, equipment, and facility management.
  • Assist in the management of the FoodPro menu and inventory system, focusing on cost control and loss prevention.
  • In consultation with the CDC, plan menus for units and catered events.
  • Collaborate with the CDC and HUDS' culinary team to develop residential cycle menus and recipes.
  • Plan and execute a range of catered events, both indoor and outdoor.
  • Ensure all kitchen equipment and related spaces are operational and well-maintained.
  • Manage linens, china, glassware, and food and beverage provisions for events.
  • Supervise and lead event staff during functions.
  • Build and maintain positive relationships within the community, providing excellent customer service and addressing specialty dietary needs.
  • Execute dining hall opening and closing procedures.
Kosher Supervision
  • Oversee all food preparation areas to ensure proper separation of meat and dairy and prevent cross-contamination.
  • Inspect kitchen equipment, utensils, and storage areas for cleanliness and proper designation for meat or dairy use.
  • Train kitchen staff on kashrut policies, including labeling, storage, and cooking procedures.
  • Monitor food deliveries to ensure all ingredients and suppliers are certified kosher.
  • Address any kashrut concerns or violations promptly and take corrective actions as necessary.
  • Maintain thorough documentation of inspections and kashrut activities.
  • Regularly communicate with the Kashrut Director regarding kitchen operations and upcoming events.
  • Perform other duties as assigned.
Fiscal Management

In collaboration with management, ensure the financial sustainability of the assigned unit through effective budget development and management.
  • Assist in creating and managing the annual operational budget, including food and labor cost management.
  • Ensure compliance with fiscal policies, payments, and reporting in accordance with University standards.
