Job DescriptionThe Pastry Chef will assist the culinary leadership team with oversight of culinary operations, with a primary focus on baking and pastry functions. This individual will bring value through supporting and driving revenue targets, maintaining quality products, attracting and nurturing talent, and fostering relationships with the operations team. The Pastry Chef shall strive to provide exceptional service to both internal and external guests at all times.
Responsibilities- Assist the Chef de Cuisine in creating, plating, and implementing outlet menus.
- Collaborate with leaders and teams outside of the culinary department to develop and execute daily service, catered functions, and special events.
- Ensure that all staff prepare menu items following recipes and yield guides, according to department standards.
- Attract, train, and lead the development of culinary talent.
- Act in the absence of the Chef de Cuisine to complete daily ordering and manage par levels.
- Assist the team with functions within the culinary department, including cooking, stewarding, and maintenance.
- Conduct daily walk-throughs of the kitchen, make recommendations for corrections, repairs, and improvements.
- Conduct daily meetings with the team to ensure preparation and efficiently communicate all pertinent information.
- Attend applicable meetings as a supervisory representative of the culinary team.
- Monitor the finances of the department, analyze and control costs, and oversee the budget to achieve a profitable operation.
- Have a full knowledge of food allergens and handle any guest with food allergies with a high sense of urgency.
- Degree or formal training in a field related to culinary arts preferred.
- Familiarity with basic and advanced cooking methods, with the ability to train others on those methods.
- Knowledge and experience with baking and pastries.
- 3+ years of experience in a high-volume, professional kitchen, with leadership experience preferred.
- Exceptional standards for cleanliness, health, and safety.
- Knowledge of Texas-style smoked meats and plant-based food preparation preferred.
- Full knowledge of food allergens and correct cooking temperatures of all vegetables and proteins.
- Ability to provide cutting tools and a calibrated food-grade thermometer.
- Full capabilities in organization and multi-tasking of the culinary department.
- Full knowledge of state health codes, EcoSure food safety and health report, and an active Food Handlers Certification.
- Demonstrate and lead team with strong communication and organizational skills.
- Ability to work independently.
- Ability to thrive in a high-pressure environment.
- Ability to be on your feet for long periods of time and lift at least 50 pounds.
- At least 21 years of age.
