Job Summary

We are seeking an experienced Executive Sous Chef to join our team at ClubCorp. As a key member of our culinary team, you will be responsible for overseeing the daily operations of our kitchen, ensuring the highest quality of food and service to our members and guests.

Key Responsibilities
  • Assume leadership role in the absence of the Executive Chef, overseeing the planning and execution of menus, procurement of food supplies, and kitchen equipment management.
  • Supervise and coordinate the work of kitchen personnel, ensuring efficient and effective food preparation and presentation.
  • Develop and implement strategies to control food and labor costs, while maintaining high-quality standards.
  • Collaborate with the Executive Chef to create menus and meal planning, ensuring alignment with member and guest preferences.
  • Manage inventory and procurement of food supplies and kitchen equipment, ensuring timely delivery and quality control.
  • Implement and enforce health, sanitation, and licensing ordinances, ensuring compliance with regulatory requirements.
  • Develop and maintain relationships with vendors and suppliers, negotiating prices and terms to ensure optimal value.
  • Provide training and development opportunities to kitchen staff, promoting career growth and advancement.
  • Conduct regular audits and assessments to identify areas for improvement, implementing corrective actions as needed.
Requirements
  • Minimum 3-5 years of experience as a Sous Chef or equivalent role.
  • High school diploma or equivalent required; college degree preferred.
  • Culinary school graduate preferred.
  • Health Sanitation Card and foodservice management certification as per state requirements.
