Job Overview

As the Culinary Operations Manager, you will oversee the efficient functioning of the kitchen(s), ensuring that food preparation, quality, and inventory management align with the high standards of Sonesta International Hotels. Your role is crucial in maintaining compliance with health and safety regulations while achieving financial objectives related to food and supply costs.

Key Responsibilities:
  • Direct daily kitchen operations, assign tasks, and communicate objectives to kitchen staff while upholding company policies.
  • Facilitate staffing decisions, including salary recommendations and disciplinary actions, in line with organizational guidelines.
  • Ensure all kitchen personnel are adequately trained and equipped to perform their duties effectively.
  • Guarantee that all menu items are crafted and presented according to established recipes and quality standards.
  • Design and innovate menu concepts for food and beverage outlets, keeping abreast of industry trends and competitor offerings.
  • Maintain precise documentation and costing for all dishes served within the food and beverage operations.
  • Establish and manage inventory procedures, determining optimal stock levels for food, materials, and kitchen equipment.
  • Implement security measures for food and beverage products, ensuring proper storage and minimizing waste.
  • Ensure all kitchen equipment is operational and well-maintained, with regular cleaning and adherence to sanitation standards.
  • Contribute to the annual budgeting process and set departmental objectives.
  • Foster collaboration and quality service through effective communication with other departments, including Sales, Catering, and Guest Services.
  • Engage with external contacts, including guests, vendors, and regulatory agencies, to uphold safety and satisfaction standards.
  • May assume Manager on Duty responsibilities or other assigned tasks as needed.
Qualifications:
  • A degree or certificate in culinary arts with a minimum of five years of culinary experience, including one year in a supervisory role.
  • Experience in a union environment is advantageous.
  • Strong interpersonal skills to effectively engage with guests and team members.
  • Excellent verbal and written communication abilities.
  • Proficient in basic mathematics, budgeting, and financial analysis.
  • Strong problem-solving, organizational, and training skills.
  • Required certifications in food safety and alcohol awareness as mandated by local regulations.
  • Willingness to work flexible hours, including nights and weekends.
